Vegetarian(-ish) Ground Meat

October 13, 2026

Here’s a fun recipe for making some kind of vegetarian(-ish) ground meat.

For the base, get some jackfruit, ideally already in dried, minced form. If you’re using dried jackfruit, cook it in water for about 2 minutes, using roughly five times its weight in water. I recommend not using plain water, but adding some premade vegetable stock and/or chicken or meat stock (though obviously, that makes it non-vegetarian).

After that, drain the jackfruit, squeeze out some of the excess water, and put it in a pan with some oil. Fry it until it starts to brown. Then add some tomato paste and miso paste(adds umami), and cook for another minute or so.

Finally, add the spices: plenty of paprika, some onion powder, garlic powder, soy sauce, salt (be careful with that), black pepper, thyme, and marjoram. I’ve also experimented with adding a little apple juice to give it a bit more sweetness. You can also add bit of butter.

I’ll probably keep experimenting with this recipe. I bet this can be used in combination with wraps or tacos.
